Yield: 4 servings

Mashed potatoes are an absolute must-have for every holiday menu!

  • 1-1/2 pounds russet or ‘Yukon Gold’ potatoes
  • 1/2 cup vegetable broth
  • 1 clove garlic, minced
  • 3 tablespoons organic butter-flavored coconut oil or olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, or to taste

  1. Bring a large pot of water to a boil. Meanwhile, peel the potatoes and cut them into equal-sized pieces.
  2. Add potatoes to the boiling water. Boil for about 30 minutes, or until you can easily pierce the potatoes with a fork (time will vary depending on the size of the potato pieces).
  3. Drain the water from the potatoes.
  4. Add vegetable broth, minced garlic, oil, salt, and pepper to the potatoes.
  5. Mash until smooth and creamy.
