Ingredients

    Sweet Vanilla-Orange Flavoring

    • 1 quart organic, vanilla-flavored, whole-milk yogurt (do not use Greek-style)
    • 1/4 cup orange juice concentrate, thawed
    • Zest from 1 medium orange, tangerine, or tangelo (about 2 teaspoons grated)

    Sweet Honey-Cinnamon Flavoring

    • 1 quart organic, plain, whole-milk yogurt (do not use Greek-style)
    • 1/4 cup raw honey
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon

    Directions

    • Line a plastic or metal colander with several layers of cheesecloth or a linen kitchen towel. Set the colander into a slightly smaller bowl so there is a minimum of 1 1/2 inches of space between the bottom of the colander and bottom of the bowl (this is where the liquid whey will collect as it drains from the yogurt).
    • Scoop the yogurt into the lined colander, then gently fold over the edges of the cloth so it covers the yogurt.
    • Place the bowl in the refrigerator and allow the whey to drip out for at least 8 to 12 hours. The longer it drains, the thicker and richer the cheese.
    • When the yogurt is ready, lift the colander from the bowl and set it in the sink. Pour the slightly tart, acidophilus-rich whey into a glass and drink it straight or add it to a smoothie later in the day.
    • Open the cloth and scoop the mound of cheese into a medium bowl. Stir in the flavoring ingredients until thoroughly blended.
    • Cover and refrigerate for several hours before serving so the flavors can mingle. For best taste and consistency, use within 3 days.
