Eating Well: Day-Ahead Garlic-Ginger Stir Fry

<p>In this recipe, the cleansing benefits of garlic and ginger mingle with those of tofu, a form of soy curd that is believed to reduce the risk of cancer. Ginger neutralizes toxins and stomach acids and aids digestion. Serve with steamed brown rice for fiber. Hoisen sauce is a type of Oriental stir-fry sauce available in most supermarkets. <em>Serves 4.</em>
</p>
<p>• 3 cloves pressed garlic<br />
• 2 tablespoons minced fresh ginger<br />
• 2 tablespoons olive oil<br />
• 1 block firm tofu<br />
• 3 tablespoons Hoisen sauce<br />
• 1/4 teaspoon toasted sesame oil<br />
• 2 tablespoons black sesame seeds<br />
• 2 tablespoons chives</p>
<p>1. One day ahead of time, crush the garlic and ginger into the olive oil and refrigerate. Cut the tofu into 3-inch strips and freeze, spaced apart so they don’t stick together.</p>
<p>2. When you’re ready to serve, stir-fry the garlic, ginger, and oil mixture for 8 minutes, taking care not to burn it. Carefully toss the frozen tofu with the Hoisen sauce and add it to the garlic and ginger mixture. Heat through. Toss with the sesame oil and top with the sesame seeds and chives, then serve.</p>
