A Taste of Summer: Melon-Citrus Cooler

Melon-Citrus Coolers, which can be made either sweet or tart, are an unexpected way to enjoy fresh watermelon.

Melon-Citrus Cooler
Serves 2 to 4

The cantaloupe and honeydew lend a naturally creamy texture to this refreshing blend of melons and citrus. Adjust the citrus juice quantities for either a sweeter or more tart drink.

1 1/2 cups watermelon, cut into
1-inch pieces
1 cup cantaloupe, cut into 1-inch pieces
1 cup honeydew, cut into 1-inch pieces
1 cup orange juice
1 cup grapefruit juice
1/4 cup lime juice
1/4 cup lemon juice
2 tablespoons honey
1 teaspoon lime zest
1 tablespoon chopped mint leaves

Process all the ingredients in a blender until smooth. (For a sweeter, less tart drink, replace the grapefruit juice with another cup of orange juice.) Add additional liquid or adjust the sweetness if necessary. Serve very well chilled.

Options: For a creamier drink, add 1 cup of low-fat, lightly sweetened yogurt. For a summer cocktail, add a splash of spiced rum or citrus vodka. You could also use this mixture to make frozen fruit treats.
