Sautéed Wild Medicinal Mushrooms Recipe

Wild mushrooms have healing properties that can support healthy immune function.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, finely chopped
  • 1 yellow onion, coarsely chopped
  • 1 pound each of maitake and shiitake mushrooms, well rinsed and coarsely chopped
  • 1/2 cup fresh Italian parsley, finely chopped (reserve some for garnish)
  • 1/2 teaspoon sea salt

Directions

  • In a sauté pan, warm olive oil. Add garlic and onion, stirring occasionally until onion is slightly translucent.
  • Add mushrooms and sauté until slightly tender, about 10 minutes.
  • Remove from heat, mix in parsley and season with salt to taste.
