- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, finely chopped
- 1 yellow onion, coarsely chopped
- 1 pound each of maitake and shiitake mushrooms, well rinsed and coarsely chopped
- 1/2 cup fresh Italian parsley, finely chopped (reserve some for garnish)
- 1/2 teaspoon sea salt
- In a sauté pan, warm olive oil. Add garlic and onion, stirring occasionally until onion is slightly translucent.
- Add mushrooms and sauté until slightly tender, about 10 minutes.
- Remove from heat, mix in parsley and season with salt to taste.
- Transfer to serving bowl, garnish with remaining parsley and enjoy!
