Ingredients
- 1 cup yogurt
- 1 cup chopped cucumber
- 1/2 cup chopped tomato
- 1/4 cup chopped red onion
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 2 tablespoons chopped fresh cilantro
- Salt and pepper
Additions:
- 1 tablespoon grated ginger
- 2 tablespoons mint
- 1/4 cup chickpeas
- Cooked spinach
Directions
- Stir all the ingredients together in a medium-size bowl. Add salt and pepper to taste.
