Add variety to this delicious Asian noodle recipe by serving it with chicken or a different mixture of vegetables.

Ingredients
- 8 ounces rice noodles
- 3 to 4 tablespoons teriyaki sauce
- 2 tablespoons rice vinegar
- 2 tablespoons toasted sesame oil
- 1 cucumber, peeled and cut into strips
- 1 yellow pepper, cut into strips
- 4 ounces smoked salmon, sliced (try to get salmon with no nitrites, preservatives or added colors)
- 2 tablespoons toasted sesame seeds, for garnish
Directions
- Cook rice noodles according to package directions, or bring a pot of water to a boil, add noodles, turn off burner, and let them cook for 5 to 7 minutes.
- Whisk together teriyaki sauce, rice vinegar and sesame oil. When noodles are finished, rinse them with cold water and toss with the dressing.
- In a large serving bowl, combine noodles with cucumber, yellow pepper and salmon. Garnish with sesame seeds and serve chilled.
