Add variety to your salads by pairing this Classic Caesar Dressing with the traditional romaine fare or kale.
Ingredients
- 1 garlic clove
- Pinch of salt
- 4 to 6 anchovies
- 1 teaspoon Dijon mustard
- 2 large egg yolks
- Juice of 1 lemon
- 1/2 cup extra virgin olive oil
- 1/4 cup plus 2 tablespoons grated Parmesan
Directions
- With a mortar and pestle, smash garlic with salt, then smash in anchovies.
