Classic Caesar Dressing Recipe

Add variety to your salads by pairing this Classic Caesar Dressing with the traditional romaine fare or kale.


  • 1 garlic clove
  • Pinch of salt
  • 4 to 6 anchovies
  • 1 teaspoon Dijon mustard
  • 2 large egg yolks
  • Juice of 1 lemon
  • 1/2 cup extra virgin olive oil
  • 1/4 cup plus 2 tablespoons grated Parmesan


  • With a mortar and pestle, smash garlic with salt, then smash in anchovies.
