Blueberry “Jell-O” Recipe

Your favorite gelatin-based treats can now be made with sustainable boxed gelatin and natural fruits and fruit juices. Yield: 4 to 6 servings.

Ingredients

  • 2 cups water
  • 3 cups blueberries
  • 1/2 cup maple syrup
  • 1/8 cup lemon juice
  • 3 tablespoons gelatin

Directions 

  1. Pour the water and blueberries into a large pot and bring to a boil. Reduce heat and simmer the berries until tender.
  2. Use an immersion blender (or a fork) to mash the blueberries in the water.
  3. Strain the mixture to remove blueberry pieces (save for use in other dishes, or compost), and put the liquid back in the pot. Add maple syrup, lemon juice, and gelatin. Mix well with an immersion blender or spoon.
  4. Pour into a pan or gelatin mold and let cool. Place in the refrigerator for at least 2 hours before serving.
