This aronia vinaigrette is simple to make and adds fresh, local flavor to summer salads.
- 1⁄2 cup aronia berries
- 1⁄2 cup water
- 1⁄4 cup olive oil
- 1⁄4 cup balsamic or cider vinegar
- 2 to 3 teaspoons sugar
- 1⁄4 teaspoon black pepper
- 1 pinch cumin powder
- 1⁄4 teaspoon tamarind paste (optional)
- Wash aronia berries and purée in a blender. Mix remaining ingredients, except tamarind, and whisk to form an emulsion. Add optional tamarind paste to increase the tangy flavor.
