This is it. This is simply the best way to cook morels. Whether you’re at a campfire cooking the day’s pickings or at your backyard BBQ, get out a grill basket and cook until the accordion pleats of each morel are slightly crispy. Pile the morels on grilled bread, pour a big glass of wine, then eat, drink and pity the fools who aren’t eating this tonight.
Basket-Grilled Mushrooms
1 1/2 pounds large fresh morels (more than 3 inches), cleaned and cut in half vertically
1 stick unsalted butter, melted
3 garlic cloves, minced
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1. Heat grill to medium.
2. Toss morels with butter and seasonings in a large bowl.
3. Add them to the grill basket and grill, tossing occasionally, until they are golden brown and crisped around the edges, about 10 to 15 minutes. Taste for seasoning, and serve immediately.
Note: An entire cup of morels–ahhh, heaven!–contains only about 20 calories, plus a smattering of important micronutrients including vitamin D and several B vitamins.
