Healthy Oatlmeal-Cinnamon Cookies

These fiber-packed, low-fat cookies, created by our editorial coordinator Dawna Duncan, are an utterly delicious treat! At this issue’s photo shoot, they were eagerly devoured as soon as the photos were taken.
When selecting the apple butter for this recipe, check the ingredients to make sure that it contains only apples and apple juice. Some brands of apple butter have added sugar and cinnamon. You can find unsweetened apple butter at health-food stores and some grocery stores, in the jam section.
- 1 cup apple butter
- 2 tablespoons vegetable oil
- 1 egg
- 2 teaspoons vanilla
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 11/2 cups white flour
- 1/2 cup wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup raisins, optional
- 3 cups rolled oats
- Preheat the oven to 350°F. Lightly coat a cookie sheet with oil or cooking spray. In a large bowl, mix together the apple butter, oil, egg, vanilla, and sugars until smooth. In a separate bowl, mix together the white flour, wheat flour, baking soda, salt, and cinnamon.
- Slowly add the dry ingredients to the wet mixture in thirds, allowing the flour to be absorbed by the moisture. Add the raisins, if desired, and stir until evenly distributed. Mix constantly while adding the rolled oats, 1 cup at a time.
- Drop spoonfuls of dough onto the cookie sheet, about an inch apart. Lightly flatten each spoonful with the back of the spoon. Bake for 10 to 12 minutes, or until slightly crisp on top. Cool the cookies on a rack and store them in an airtight container for a few days, or in the freezer.
