Dressing in a Pot

Dressing that’s cooked the traditional way–inside the turkey, absorbs fat. For a cholesterol-free alternative, bake the dressing in its own pot and boost the flavor with herbs.

• Canola oil
• 1 medium yellow onion, minced
• 1 stalk celery, chopped, or 1/4 cup fresh lovage stems, chopped
• 1 tablespoon fresh or 1 teaspoon dried sage, minced
• 3 1/2 cups slightly stale bread cubes
• 3/4 teaspoon celery salt
• 1/4 to 1/2 cup chicken or vegetable broth

1. Preheat the oven to 325°F. In a large nonstick pan, add enough canola oil to coat the bottom of the pan.

2. Sauté the onion and celery or lovage over medium-low heat for 15 minutes. Stir in the sage and cook 5 more minutes. Remove from heat.

3. Add the bread to the pan. Sprinkle with celery salt and mix thoroughly.

4. Slowly add the broth, a couple of spoonfuls at a time, into the pan and mix. Stir gently until the bread cubes are slightly moister than fresh bread.

5. Using canola oil, lightly coat a baking dish that has a lid; add the stuffing, slightly pressing it into the dish.

6. Cover and bake for 45 minutes.
