The following Thin Mint Smoothie recipe has been excerpted from the chapter “Drinks.”

Thin Mint Smoothie

This smoothie was inspired by everyone’s favorite Girl Scout cookie. SERVES 1 OR 2

• 6 dates, seeded
• 1 1/2 cups filtered water
• 1 large sprig mint
• 3 tablespoons raw carob powder
• 1 cup Coconut Milk
• 4 bananas, peeled, frozen, and thickly sliced

1. Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Place the dates and their soaking water in a blender, add the mint and carob powder, and blend until smooth. Blend in the coconut milk and the bananas until smooth. Pour into a tall glass and serve.
