These hearty muffins from Vicky Mosser of Irving, Kentucky are perfect for breakfast, brunch, or a midafternoon snack.</p>
<p>• 1 cup whole wheat flour<br />
• 1 cup rolled oats<br />
• 1/2 teaspoon salt<br />
• 1 tablespoon baking powder<br />
• 1/2 teaspoon nutmeg<br />
• 2 teaspoons cinnamon<br />
• 1 1/2 teaspoons green powdered stevia leaf<br />
• 1 egg<br />
• 3/4 cup milk<br />
• 1/4 cup oil, or 1/4 cup applesauce<br />
• 1 medium apple, cored and chopped coarsely<br />
• 3/4 cup raisins</p>
<p>1. Preheat the oven to 400°F.</p>
<p>2. In a large bowl, combine the first seven ingredients thoroughly. In a medium bowl, mix the remaining ingredients. Gradually stir the dry ingredients into the moist ones. Spoon the batter into greased muffin tins. Bake for 15 minutes, or until a toothpick inserted in the center of a muffin comes out clean.</p>
