Date coconut rolls are soft and easily stuffed with nuts or frosted with nut butter. You can buy the rolls at health-food stores or make them yourself by putting pitted dates through a grinder twice, then shaping the ground dates into small logs and rolling them in unsweetened, sulfite-free coconut. They make a delicious, nutritious, potassium-rich cookie and candy alternative. The combination of dates and lightly toasted pecans reminds us of pecan pie filling! - Date Coconut Rolls (see directions above)
- 1/4 to 1/3 cup lightly toasted nuts, such as almonds or pecans
1. Stuff each date roll with 1 tablespoon of whole nuts or nut halves.
2. Serve immediately or cover and pack in a lunch.
