Yam Comfort Bake
Serves 4 as a side dish
Perfect comfort food any time, yams are low fat and absolutely delicious. To turn this into a satisfying main dish, simply double the recipe and adjust seasonings to taste.
Tools:
Baking pan with lid (cover with aluminum foil if no ovenproof lid is available)
Sauté pan
Measuring spoons
Ingredients:
2 large yams or sweet potatoes, cut into bite-size chunks
olive oil
3 tablespoons tamari, shoyu, or Bragg Liquid Aminos
About 1 teaspoon sea salt
Fresh-ground black pepper, to taste
1/4 teaspoon crushed chili peppers (optional)
1/2 cup shredded coconut (optional)
10 to 12 ounces firm tofu, cut into bite-size chunks
5 to 8 garlic cloves, chopped or sliced thin
1 medium yellow onion, diced
1. Preheat oven to 425° F.
2. The easiest method is to combine all ingredients in a lightly oiled baking pan and bake at 425° F for 30 to 45 minutes until yams are tender.
3. For more flavorful results, place yams in lightly oiled baking pan, sprinkle on tamari, sea salt, black pepper, and crushed chili peppers (if using), then toss with coconut. Place the pan, covered, in oven.
4.While it’s baking, sauté tofu, garlic, and onion in tamari and about 1 tablespoon oil until browned. Remove pan from oven, and toss tofu, garlic, and onion with yams. Leave the lid off and resume baking until yams are tender. (Total baking time: 30 to 45 minutes.)
