Orange-Glazed Apple Cake

The classic flavors of orange and apple evoke traditional winter meals and fond memories.

Orange Glazed Apple Cake
Serves 8 to 12

Apple Cake

3 sticks unsalted butter, softened
1 1/2 cups sugar
1/2 cups light brown sugar
1 teaspoon vanilla
Zest and juice of one orange
3 eggs
1 1/2 Honey Crisp apples, peeled and grated
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon table salt
1/2 teaspoon ground mace
1/4 teaspoon allspice
1/4 teaspoon clove powder

Large (at least 12-cup capacity) bundt pan

Orange Glaze

1/4 teaspoon table salt
Zest and juice of one orange
1 teaspoon vanilla
1/4 cup cream
1/2 cup light brown sugar

1. Combine all of the orange glaze ingredients in a saucepan and simmer over medium heat until all the brown sugar is dissolved. Set aside.

2. Preheat the oven to 325 degrees. With an electric mixer, blend butter, sugar, brown sugar, vanilla and orange zest and juice. Slowly mix in the eggs.

3. Using a kitchen towel, wring out the extra juice from the grated apples. By hand, mix the grated apple into the butter.

4. Return to mixer and mix in remaining ingredients until smooth.

5. Spray the bundt pan with cooking oil. Add the cake batter to pan, and bake for 55 minutes. Check doneness with an inserted wood skewer. If it comes out clean, the cake is done. If not, cook for 5 more minutes.

6. Let the cake cool, then invert it onto a large cake plate.

7. Poke a hole with a wood skewer at about every inch along the top of cake.

8. Pour the glaze over the cake. Let it sit for 20 to 30 minutes, and then serve.
