A bowl of ammah warms the spirit on cold winter nights. Typical American hot cereals can’t compare with it. Nuts and raisins provide complementary proteins and iron, while aniseed imparts flavor and aids digestion.
• 1 1/2 cups whole wheat berries, rinsed
• 4 cups water
• 1 tablespoon aniseed
• Sugar or honey
• 1/2 cup walnut pieces
• 1/2 cup raisins
1. Simmer the wheat berries, water, and aniseed, covered, for 11/2 to 2 hours, stirring occasionally and adding water if necessary.
2. When the wheat is tender, serve in bowls with sugar or honey, walnut pieces, and raisins.
