When lemons are not in season, tart sumac is used as a substitute to mellow onions’ sharpness and bite. The onions are excellent with bread and as a garnish for salads, falafel, and hummus.
• 1/2 Spanish onion, julienned
• 2 to 4 tablespoons sumac
1. Toss the onion with the sumac in a small bowl and let it stand for several hours.
