Serves 1
Try this recipe in the spring, when mangoes are cheap and plentiful.
• 1 small, very ripe mango, washed
• 4 large strawberries, fresh or frozen
• 1/2 cup apple juice
• 6 fresh spearmint leaves
1. Peel the mango, remove and discard the pit, and chop the fruit coarsely.
2. Process all the ingredients in a blender until smooth.
