Serves 2
•1 1/2 cups cubed grilled chicken breast
•1/4 cup chopped celery
•1/4 cup coarsely chopped walnuts
•3 tablespoons mayonnaise
•1/4 teaspoon salt
•Several large lettuce leaves
•1 kiwi, pared and sliced
1. Combine the chicken, celery, walnuts, mayonnaise, and salt.
2. Spoon onto two lettuce-lined salad plates.
3. Garnish each serving with the kiwi slices.
