Nothing equals the flavor of fresh basil in summer. Serve this over fresh avocados, tomato wedges, a bit of diced green onion and your choice of salad greens. MAKES ABOUT 1/4 CUP

• 1 tablespoon red wine vinegar
• 1 teaspoon fresh lemon juice
• Dash salt and pepper
• 1/2 teaspoon sugar
• 2 sprigs fresh basil, chopped
• 3 tablespoons olive oil

Combine vinegar, lemon juice, salt, pepper, sugar and basil. Using a whisk, gradually beat in oil until mixed.
