The Noble Bay: Bay Honey Custard Sauce

Makes about 2 1/2 cups

This sauce has a warm, earthy, comforting flavor that’s delicious on sliced fruits or pound cake. Try it with poached pears or fresh figs.

  • 2 cups whole milk or half-and-half
  • 4 tablespoons cornstarch
  • 1/2 cup light-colored mild honey, or to taste
  • 2 eggs
  • 3-4 bay leaves
  • 1 small cinnamon stick

1.Combine milk, cornstarch, honey, and eggs in a blender jar; blend until well mixed.
2.Pour into a 11/2-quart heavy saucepan and add the bay leaves and cinnamon stick.
3.Cook over medium heat, stirring constantly, until thickened.
4.Off heat, remove the bay leaves and cinnamon stick with a slotted spoon.
5.Serve warm.
