 For most preparations, it is necessary to grind hard peppercorns and berries before using. Cooks from many culinary traditions toast the seeds and peppercorns over low heat before grinding to enhance the flavor. To ensure the best flavor, turn the spice mixture as it heats and don’t let it burn. Salt also enhances the flavor of spice blends.

Combining ground spices such as grains of paradise, cinnamon, cloves, juniper berries, allspice, and black peppercorns makes an earthy, fragrant, dark seasoning; however, it can discolor some foods. Add the blended mixtures in small increments, tasting for flavor intensity and watching the color.
