Ingredients

  • 1 cup oats
  • 1 cup all-purpose flour
  • 1/4 cup ground flaxseed (or flaxmeal)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 5 tablespoons butter, at room temperature
  • 1/3 cup packed brown sugar
  • 1 cup 100 percent pumpkin (not pumpkin pie filling)
  • 1/2 cup nonfat vanilla Greek yogurt
  • 1 large egg, beaten

Directions

  • Preheat the oven to 350 degrees F. Set aside 2 nonstick baking sheets.
  • In a medium bowl, combine the oats, flour, flaxseed, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Set aside.
  • In a large bowl, cream the butter and sugar together. Add the pumpkin, Greek yogurt, and egg. Mix thoroughly.
  • Slowly add the flour mixture to the pumpkin combination. Mix well. Drop by rounded spoonfuls onto the baking sheets. Bake for 15 minutes until golden brown. Let cool on the pan for 5 minutes, then transfer to a wire rack to cool for another 5 minutes before frosting.
