Chive Flower Vinegar

Collect a good 2-3 cups of fresh chive flowers. Place in a quart jar and cover flowers with white vinegar.  Be sure to use white not apple cider.

Seal the jar with a plastic, not metal lid as it will leach vitamins and minerals from the vinegar.

Set in a sunny window for 4-6 weeks until the flowers become blanched pale and vinegar a vibrant pink fushia color.

Stain the vinegar through a coffee filter and bottle in decorative clear glass jars.

Enjoy as an addition to any vinegar and oil dressing or on steamed pot herbs.

Vinegar ready to be prepared.
