Caramelized Lemon Rosemary Tart
Apple-Pine Nut Rosemary Tart

For citrus flavor, try the Caramelized Lemon Rosemary Tart. In the dead of winter, when citrus is at its best in the markets, brighten up your day with this rosemary-spiked lemon tart. It’s reminiscent of crème brûlée with a caramelized top and that signature snap! when the spoon pierces the filling.

The hazelnut meal in the crust adds a hint of nuttiness to balance the sweetness of the filling. Hazelnut meal can be found in the health-food section of better supermarkets. (Look for Bob’s Red Mill brand.)

Whip up the Apple-Pine Nut Rosemary Tart and let the combination of pine nuts, apples, rosemary and apricots delight and surprise you. The pungency of rosemary pairs well with the quiet sweetness of apples and apricots. Plus, rosemary is milder in winter than in summer, so don’t be afraid to use a little extra if you really favor its flavor.
