Beat The Heat With These Chilled Soups

J.PattonThe weather for Kansas hasn’t changed much in the last couple of weeks. In fact, it feels like we’ve spent the whole month of July under an excessive heat advisory. The higher the temperatures climb, the less I feel like eating—or cooking, for that matter. So I decided to look for a light and refreshing entrée to try on one of these sweltering summer days: chilled soup.

Here are a few of the recipes I tracked down. All are made with fruits and vegetables, are pretty easy to make, and the leftovers can be stored to enjoy later.

• 1 cantaloupe
• 2 cups orange juice
• 1 tablespoon fresh lime juice
• 1/4 teaspoon ground cinnamon
