On the frontier, if you didn’t know how to make bread, you went hungry. Bread was a staple of the pioneer diet. It soaked up the gravy from their stews at supper, it filled them up at breakfast before a long day of work. Pioneers shared sourdough starters with their neighbors and taught their children to knead with gentle but firm hands. For these adventurous people who journeyed out into wild, unexplored territory, bread was a taste of home.

Before yeast was readily available, the creation of a starter was the only way bread could be made. Starters are often shared with friends, hence the name of this first sweet bread.

A lot of sourdough recipes call for active dry yeast as well. :-/ If you need to or choose to avoid yeast (active dry), then you need to find TRUE sourdough recipes. They're hard to find. There was a speaker at the Mother Earth News fair in 2016 who spoke on sourdough! She was writing a new book to be released in 2017. But I can't remember her name, and I can't find where I wrote it down. :-( Which is why I'm on here now. She used only sourdough. She said in her seminar to just experiment with recipes. Instead of the yeast, use sourdough starter and see how it works out, modify and try again! Sounds messy, but if I can't find her book, that's what I'll be doing. :-/

A lot of sourdough recipes call for active dry yeast, which is NOT sourdough natural yeast. It is the yeast some (like me) need to or choose to avoid. There was a lady at the Mother Earth News fair in 2016 that was writing a book for TRUE sourdough recipes (NO yeast except for what is natural in the sourdough). Problem is I can't find where I wrote her name down. :-( Which is why I happened to come on here this time! But you need to find true sourdough recipes withOUT active dry yeast if you are looking to avoid "yeast".
