Gluten-Free Brownie Recipe

At last! A rich, melt-in-your-mouth, gluten-free, dairy-free, nut-free brownie. Serve with a scoop of coconut milk ice cream for an over-the-top treat.

Sweetness: High

• 1 cup dark chocolate chips
• 1/4 cup Spectrum all-vegetable shortening
• 1 cup coconut sugar
• 4 large eggs
• 1 tablespoon vanilla extract

1. Preheat the oven to 350 degrees. Grease an 8-inch square baking dish with shortening.

In what ancient society did cavepeople have vegetable shortening? As if that isn't a highly processed "food"! I'm so tired of everything that doesn't contain chemicals or flour being called paleo. Anymore, it is just another trendy catchphrase used to equivocatingly designate a food as healthy. To see Mother Earth News jump on the bandwagon is disappointing.
