Classic Caesar Dressing Recipe
• 1 garlic clove
• Pinch of salt
• 4 to 6 anchovies
• 1 teaspoon Dijon mustard
• 2 large egg yolks
• Juice of 1 lemon
• 1/2 cup extra virgin olive oil
• 1/4 cup plus 2 tablespoons grated Parmesan
1. With a mortar and pestle, smash garlic with salt, then smash in anchovies.
2. In a bowl, mix garlic-anchovy paste with mustard, egg yolks and lemon. To emulsify dressing, add oil drop by drop at first and then in a slow stream, while whisking.
