Similar to caramelizing onions, roasting garlic deepens the sweetness of this all-star ingredient and brings out a nuttiness while mellowing its pungency. Prepare whole roasted garlic cloves ahead of time and keep them stored in your freezer. This is a wonderful food to have on hand because it can add a punch of flavor to anything you can think to toss it in with. Pinch it out of its slippery skins whole or smash its cloves into a paste to whip into other ingredients such as avocados, butter or hummus. You can even swap the fresh garlic called for in many recipes with this wonderful freezer-food for added convenience.
