This spring, dress up the early strawberries with fresh mint sprigs and homemade whipped cream for an easy, delicious dessert. Finely chop 1/4 cup fresh mint leaves and stir into 1 pint heavy whipping cream. Refrigerate for an hour or more. Meanwhile, place a metal bowl and the mixing blades or whisk from your mixer in the freezer. Strain leaves from cream, pour into chilled bowl with 1/2 teaspoon vanilla extract and 1/4 cup powdered sugar (if desired). With the cold utensils, whip the cream into medium peaks.
Top the strawberries with the cream, add mint garnishes, and serve.
