The Mustard Seed: Homemade Prepared Mustards

Try these 2 great mustard seed recipes

 Each recipe makes 3/4 cup 

Dijon-StyleI’ve added a little honey to this classic recipe. Traditionalists may want to add a tablespoon of white wine.

• 3/4 cup mustard powder or freshly ground seeds
• 1/4 cup water
• 1/4 cup tarragon or white wine vinegar
• 2 teaspoons honey
• 1/4 teaspoon salt
• 1 clove garlic, crushed or finely minced

Coarse-Grain• 1/2 cup mustard powder
• 1/4 cup coarsely ground
• mustard seeds
• 1/4 cup water
• 3 tablespoons apple cider vinegar
• 1/4 teaspoon salt
• 1 1/2 teaspoons sugar (optional)
• 2 teaspoons minced fresh thyme leaves or 1 teaspoon dried thyme leaves, crumbled

1. Blend the mustard and water to a paste and let it stand for 10 to 15 minutes. Stir in the remaining ingredients. Thin with a little more water or vinegar if necessary. Pack into clean jars.
