Cranberry Ginger Jam Thumbprints

1½ cups cranberries (fresh or frozen)
¼ cup water
1⁄3 to 2⁄3 cup raw sugar
1 to 2 teaspoons fresh ginger, grated
1 stick unsalted butter, softened
¼ cup raw sugar
1 egg yolk
¼ teaspoon pure vanilla extract
Pinch salt
1 cup unbleached all-purpose flour
2 tablespoons rolled oats (optional)
1⁄3 cup nuts, finely chopped (optional)

1. Preheat oven to 375 degrees. Heat cranberries, water and 1⁄3 cup sugar over medium heat, stirring occasionally.

2. Meanwhile, cream butter and sugar. Add egg yolk, vanilla and salt; beat well. Gradually add flour until fully blended. Fold in oats if using.
