Simple Herbal Gifts: Citrus Spice Simmering Potpourri

| October/November 1993

You’ll find everything you need for this appealing blend at the grocery store or on your spice shelf, except for the essential oils. Even if you omit them, you’ll have a fragrant mixture whose scent holds up well after several refills of water.

• 1 cup 1-inch cinnamon sticks
• 1 cup whole allspice
• 2 cups star anise
• 1 cup coriander seed
• 2 cups dried orange peel
• 1/2 cup cloves
• 1/2 cup crushed nutmegs
• 10 drops cinnamon oil
• 10 drops allspice oil
• 20 drops sweet orange oil

Layer ingredients in a gallon jar. Add the oils to their corresponding ingredients as you go. Shake well and let age at least one day before using. Makes about 2 quarts.
