Because you never outgrow the need for healthy school lunches, University of Wisconsin-Madison cafeterias have switched from conventional hamburgers to organic. Produced locally and distributed on campus by Organic Valley, a nationwide farm co-op, the organic beef is a step toward meeting student requests for more organic food. The University Housing Food Service also plans to serve all-organic salads as soon as it finds enough local organic farmers to supply all the ingredients.
