Garden-fresh herbs and a flavor-packed cheese, such as smoked gouda, are a delicious way to help meet your daily calcium requirements. If you are worried about acidity in your diet, avoid hard cheeses like gouda and try soft cheese in the recipe instead. These super-simple quesadillas can be made in minutes and work well as a light lunch or supper, or as an appetizer. MAKES 6 QUESADILLAS
• 6 large corn or whole wheat tortillas
• 1⁄2 pound smoked gouda, shredded or thinly sliced
• 1⁄2 pound reduced-fat cheddar cheese, shredded or thinly sliced
• 1 apple, thinly sliced
• 1⁄2 cup white onion, thinly sliced
• 3 tablespoons fresh oregano
• 3 tablespoons fresh rosemary
• 3 tablespoons fresh thyme
• 6 fresh sage leaves
1. In a large nonstick skillet or frying pan over medium heat, warm tortilla with a little canola oil. When soft and warm, flip to other side and continue to heat.
2. Place cheese in half of the tortilla. Add apple, onion and herbs.
3. Fold tortilla over into half-moon shape. Continue to warm until cheese starts to melt. Flip over and heat until cheese is melted.
4. Remove quesadilla from pan, place on plate. When cool enough to handle (but still warm), cut into wedges.
