In Chinese medicine, ginger is a warming food that increases circulation and dispels internal cold. When you’re sipping a cup of hot ginger tea, however, you won’t need ancient Chinese medicine to convince you that it’s a delicious antidote to winter’s chill.
To have fresh ginger available all year, freeze a whole piece of ginger root in a plastic freezer bag.
To make the tea, place thin slices or gratings of the frozen root into a cup and add boiling water. Or, for strained tea, grate the ginger root and place it in a tea ball. Let steep for a few minutes and enjoy. Honey can be added to taste.
