Isn’t “natural Las Vegas” an oxymoron? You might be surprised how attentive this high-rolling neon city is to conservation. Annual rainfall averages slightly more than four inches, so those who don’t manage their resources, especially water, are far too short-sighted to succeed. Finding a natural hotel or vegetarian fare is more like a hard eight than a lucky seven, but it’s possible.

The Mirage
For a breath of fresh air, The Mirage’s non-smoking floors and indoor rainforest—complete with palms, waterfalls, and lagoons—provide respite from noisy slot machines. 3400 Las Vegas Boulevard South (800) 374-9000

New York New York Hotel & Casino
Guestrooms boast water-saving showerheads, sinks, and toilets, while landscaped areas use drip irrigation, reducing water usage by 80 percent. 3790 Las Vegas Boulevard South (888) 696-9887

Ethel M Chocolates
Snails, microbes, plants, and fish feast at this factory, but not on candy. They’re part of a revolutionary wastewater treatment system, the Living Machine. Sample the sweets, then tour waste-consuming technologies in tanks, marshes, and reed beds. 2 Cactus Garden Drive, Henderson (702) 458-8864

Enjoy the antics of water acrobats knowing Cirque du Soleil’s 1.5 million-gallon pool is hydro-conscious. The facility uses banks of sand filters to maintain near-perfect visibility, and the pool is refilled only once a year, when old water is dumped into Bellagio’s front lake. Bellagio Hotel, 3600 Las Vegas Boulevard South (888) 488-7111

Canyon Ranch Cafe
This spa restaurant specializes in wholesome fare—much of it organic and additive free—including fresh fish, poultry, whole grains, and vegetables. The Venetian, 4777 Las Vegas Boulevard South (702) 414-3633

Go Raw Cafe
Yes, Sin City does have an inexpensive spot for non-decadent vegetarian cuisine. All menu items are made from raw, vegan, and organic ingredients. 2381 E. Windmill (702) 450-9007 2910 Lake East Drive (702) 254-5382

Spice Market Buffet
Vegas vegetarians can find plenty to love—fresh tabouli, rolled grape leaves, and meat-free entrees and soups—in the large Middle Eastern selection. Aladdin Resort & Casino 3667 Las Vegas Boulevard South; (702) 785-9005
