Clover Sandwich Spread
MAKES 2 OR 3 SANDWICHES

This is my idea of a great spread for bread or crackers after a hard morning in the garden. You may add other vegetables such as radishes and green peas, depending on what’s ready to be harvested at the time.

•8 ounces cream cheese, softened
•2 to 3 cloves garlic, chopped
•2 green onions, chopped, or 4 tablespoons chopped chives
•1/2 cup spinach leaves, finely chopped
•6 red clover flowers, chopped
•Other edible flowers or alfalfa sprouts for garnish

1. Combine the cream cheese, garlic, onions or chives, spinach and clover flowers in a bowl.

2. Spread on whole-grain bread and top with alfalfa sprouts, or spread on crackers and garnish with additional edible flowers.
