Make Oatmeal Cobbler with Fresh Nectarines

My local nectarines were packed full of flavor this year, so I decided to use them to make something that I could share with everyone while satisfying a craving for oatmeal cookies, all at the same time. I cut my oatmeal cookie dough recipe in half and used it as the crust for my cobbler. This amount works perfectly for a 10-inch cast iron skillet. You can use this recipe as a basis and substitute your favorite fruits, nuts, etc. I can't wait to try it with apples this fall!

Nectarine Oatmeal Cobbler  


• 8 nectarines, peeled and sliced
• 1/4 cup Kahlua
• 1/4 cup brown sugar
• 2 tablespoons cornstarch
• 1 teaspoon cinnamon
• 1/2 teaspoon freshly ground nutmeg
• 4 tablespoons unsalted butter


• 1 stick butter
• 1/2 cup brown sugar
• 1/4 cup sugar
• 1 egg
• 1/2 teaspoon vanilla
• 3/4 cup all-purpose flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon cinnamon
• 1/2 teaspoon salt
• 1 1/2 cups old-fashioned oats
• 1 cup walnuts 

1. Preheat oven to 350 degrees.

2. Place nectarines in hot water for 2 minutes and then transfer to a bowl of cold water. Remove skins and pits and slice into large bowl.
3. Add Kahlua, brown sugar, cornstarch, cinnamon and nutmeg. Mix well to coat the nectarines evenly; set aside.

4. In a 10-inch cast iron skillet over medium-low heat, melt 4 tablespoons butter. Add the nectarines and cook until heated through, about 5 minutes. Place skillet in the oven for 10 minutes.

5. Beat together butter and sugars until creamy. Add egg and vanilla, beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and walnuts; mix well. Remove skillet from the oven and drop large spoonfuls of the dough onto bubbling nectarines. Cook for 20 to 30 minutes until the top is browned and the fruit is bubbling.

6. Let cool 5 to 10 minutes, serve with vanilla ice cream.
