A Vitamin C Super Smoothie

Protecting your eyesight is incredibly important, especially as you approach your senior years. Good eyesight is a major factor in retaining not only your quality of life but your independence as well, and yet, as people age, their eyesight tends to deteriorate.

Cataracts (the clouding of the eye lenses) are only one of the many issues your eyes can face as you get older. However, there may be a way to defend yourself from this common eye problem. Older adults with more vitamin C in their diets have less of a chance of developing cataracts, according to a recent study in India.

And this does make sense. Vitamin C is an antioxidant. Antioxidants help to protect cells (including the eyes) from damage by oxidation, which plays a role in the formation of cataracts. Nevertheless, this isn’t a reason to overload on vitamin C, for too much of anything is never good. In the United States, the recommended daily amount of vitamin C is 90 mg for men and 75 mg for women. To make sure you’re getting your proper daily dose of vitamin C, choose foods such as oranges, grapefruits, kiwi, strawberries, watermelons, broccoli, tomatoes, kale, red peppers and Brussels sprouts.

Vitamin C Super Smoothie

SERVES 2

• 1 cup milk (I use vanilla almond milk)
• 1 cup orange juice
• 2 tablespoons flaxseed
• 2 cups spinach
• 1 banana
• 1 cup strawberries
• 1 cup blueberries
• 1 cup pineapple
• Ice

1. Place the first 8 ingredients (in that order) in a blender and combine.

2. Add ice and blend until smooth. For thinner smoothies, use less ice; for thicker smoothies, use more ice.

3. Pour into a glass, garnish with a strawberry, and enjoy!
