Wine is for wooing. For centuries, herbs and spices have been used to enhance the flavor of a favorite bottle.

• In a large carafe or pitcher, combine a bottle of dry white wine with 1 cup dry sherry, or to taste.

• Add a big handful of fresh lemon verbena leaves and a 1-inch piece of peeled and sliced ginger root.

• Cover with plastic wrap and chill for about two hours.

• To serve, remove the ginger and lemon verbena leaves and pour the wine into wineglasses. Garnish with a fresh sprig of lemon verbena.
