• 6 large cloves garlic
•1 teaspoon salt
•1/4 cup olive oil
•3/8 cup red wine vinegar
•2 heaping teaspoons fresh thyme, minced
•2 teaspoons chili sauce
•Fresh pepper to taste
Mash garlic and salt to a paste with a mortar and pestle. Combine with other ingredients. Let mixture stand a few hours or overnight in the refrigerator to blend flavors. Stir before using.
