Who needs the heat when raw food has so much sizzle? The Raw Truth (Celestial Arts, 2011), by raw foods pioneer Jeremy A. The following Thin Mint Smoothie recipe has been excerpted from the chapter “Drinks.” 

Thin Mint Smoothie

This smoothie was inspired by everyone’s favorite Girl Scout cookie. SERVES 1 OR 2

• 6 dates, seeded
• 1 1/2 cups filtered water
• 1 large sprig mint
• 3 tablespoons raw carob powder
• 1 cup Coconut Milk
• 4 bananas, peeled, frozen, and thickly sliced

1. Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Place the dates and their soaking water in a blender, add the mint and carob powder, and blend until smooth. Blend in the coconut milk and the bananas until smooth. Pour into a tall glass and serve.
