Homemade Liqueurs with Herbs: Tarragon Flavored Vodka

<p>
<em>Makes about 1 quart<br />
</em>Tarragon flavored vodka, along with sweet grass (<em>Hierochloe odorata</em>), dill or thyme vodka infusions, are used for toasting in Russia, Poland and Denmark.</p>
<ul>
<li>½ cup fresh tarragon</li>
<li>5 black peppercorns</li>
<li>1 liter vodka</li>
<li>2 teaspoons sugar (optional)</li>
</ul>
<ol>
<li>Combine all ingredients in a clean glass jar. Cover and let stand in a cool place for at least 24 hours or up to 1 week.</li>
<li>Strain through a coffee filter into a clean glass jar or bottle with an airtight lid. Cover and store in the refrigerator or freezer indefinitely and serve ice cold, straight up in small glasses.</li>
