Lemon Mousse with Fresh Berries
Serves 4

Rich and smooth, this wonderful dessert is also quick and easy. The bright lemon flavor of fresh organic ingredients is a perfect way to celebrate spring and Earth Day.

1/2 cup granulated sugar
1/2 cup soymilk
2 tablespoons cornstarch
Finely grated zest from 1 lemon
3 tablespoons fresh lemon juice (from about 1 lemon)
12-ounce package plain, soft silken tofu, drained
1/2 pint raspberries
Honey for drizzling (choose a local variety)

1. Measure sugar, soymilk and cornstarch into a small pot and whisk well. Place over low to medium heat for a few minutes, whisking constantly, until thick. Remove from heat and whisk in lemon zest and lemon juice.

2. Place tofu in blender. Add thickened soymilk mixture, using a rubber spatula to scrape the pot. Cover and blend on high speed for 15 seconds or until smooth, stopping to scrape down the sides as needed. Turn into dessert cups, using a rubber spatula to scrape the sides of the blender. Serve warm, or refrigerate to chill.

3. To serve, scatter raspberries over the top and drizzle with honey.
